Paleo Banana Bread | with Honey Mama's Chocolate

You can never go wrong with a slice of banana bread, unless you don't like banana bread - then this isn't for you. For those baking favorites, we wanted to craft a recipe that lets you go all in without leaving you full of guilt and sugar hangover. 

Ingredients:

+ 1 1/2 c Cassava Flour (Anthony's good was our choice)

+ 1/2 c Coconut Milk, we went straight from the carton - but a can will work too. 

+ 3 eggs 

+ 3 ripe bananas + 1 for topping

+ 2 tsp cinnamon

+ 2 tsp vanilla

+ 2 tsp baking soda 

+ 1/2 c Cinnamon Vanilla Coconut Butter - can use any of our coconut butters

Optional, but suggested;) 1 bar of Honey Mama's chocolate bar, flavor of your choosing. 

How - to:

Pre-heat oven to 350, grease up a loaf pan with oil of your choosing. 

Blend/process wet ingredients until blended. Add in dry ingredients until all blended. pour half of the mixture in the pan, evenly layer 2/3 of the Honey Mama's chocolate bar strips, load the rest of the batter in, slice banana down middle and place on top of batter with the remaining bar of chocolate. Bake for 45-60 minutes, depending on the strength of your oven! 

Let cool, enjoy with coconut butta' drizzle on top or nut butter of choosing if you like to dress it up. Store in airtight container in the fridge!
